2. Ingredients for Za’atar Roasted Chicken
- 2 lb. chicken thighs (bone-in, skin-on, 4 thighs)
- 1 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 Tbsp. olive oil
- 1 1/2 tsp. za’atar seasoning
- 1/2 lemon (cut into 3-4 wedges)
Preheat the oven to 400°F.
Season the chicken thighs on both sides with the salt and black pepper. Arrange the thighs skin-side up in a 9-inch-square baking dish.
Drizzle the olive oil over the chicken thighs and rub it evenly over the skin. Sprinkle the za’atar seasoning evenly over the chicken. Squeeze the juice from the lemon wedges over the chicken, and then arrange the lemon wedges between the chicken thighs.
Roast the chicken on middle rack of oven until skin is browned and crisp and chicken reaches an internal temperature of 165°F, 42-47 minutes.
