5 Pancake Recipes to Wow Your Family on Pancake Day

February is full of known and unknown holidays. Pancake Day is celebrated in many countries all over the world, but on different days. This year, Pancake Day falls on Tuesday, 17 February, particularly in the UK. Whether you celebrate it or not, it’s a good reason to enjoy some yummy pancakes. I made my first pancake when I was 6, and luckily it wasn’t lumpy.

My parents, and even my brother who doesn’t like pancakes and baked goods, liked them and love my pancakes these days. I enjoy trying new pancake recipes and here are some of my favorite recipes you can make tomorrow to wow your family.

1. Peanut Butter Pancakes

These pancakes are easy to make and your kids will definitely love them! Peanut butter pancakes are extremely sweet so I usually add less sugar than needed. If you watch your sugar intake, you can skip sugar and use honey instead.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 large eggs
  • 6 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 1/4 cups fat-free milk
  • 1/4 cup peanut butter
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • honey, optional

Directions:

In a medium bowl, combine baking powder, flour, sugar, and salt. Combine milk, peanut butter, vanilla extract, eggs and vegetable oil. Add it to your flour mixture. Stir until smooth.

Preheat a large pan or griddle to medium heat. For each pancake, spoon about 1/4 cup batter onto it and cook until lightly brown, 3-4 minutes.

2. Greek Yogurt Pancakes with Banana and Honey

These pancakes are perfect for both dieters and non-dieters. If you watch your calorie intake, use 2 egg whites instead of one large egg, and any fat-free yogurt you like. When I make Greek yogurt pancakes for my niece, I usually top them with some nuts and chocolate as well as banana and honey. She has a huge sweet tooth!

Ingredients:

  • 5.3-oz container Greek yogurt
  • 1/2 cup all-purpose flour
  • 1 large egg, or 2 egg whites
  • 1/2 large banana
  • 1 teaspoon baking soda
  • nuts, chocolate, optional

Directions:

In a medium bowl, mix Greek yogurt and egg until smooth. Add baking soda and flour, stirring until the batter is smooth and thick.

Preheat a large pan or griddle to medium heat. Spray it with nonstick spray. For each pancake, spoon or scoop 1/4 cup batter onto your pan and cook until lightly brown. Top your pancakes with sliced banana and honey. You can also add chocolate and nuts.

3. Italian Chestnut Flour Crepes

These gluten-free pancakes are healthy, diet-friendly and delicious. Their taste is a little bit unusual, but if you top them with some berries, cottage cheese or honey you will like them. My cousin, who currently lives in Bologna, shared this recipe with me, and I’m going to share it with you.

Ingredients:

  • 2 cups chestnut flour, sifted
  • 1 egg
  • 1 cup water
  • 1 cup milk
  • 1/2 teaspoon salt
  • 2 tablespoons melted butter

Directions:

In a medium bowl, combine chestnut flour, egg, milk, water, salt and 1 tablespoon melted butter. Let it stand for 15-20 minutes. Preheat a large pan or griddle to high heat. Brush your pan with melted butter and pour a little bit of batter in pan – your pancakes should be as thin as possible. Cook until golden brown.

4. Ukrainian Potato Pancakes

These salty pancakes that I loved when I was a child (and I still love them!) make a great breakfast. I know potato pancakes are cooked in different countries, but Ukrainian potato pancakes seem to taste better. Serve your potato pancakes with a dollop of sour cream and dill to make them more delicious.

Ingredients:

  • 5 large potatoes
  • 1 egg
  • 1 onion
  • 1 tablespoon sour cream, optional
  • 3 tablespoons all purpose flour
  • 1 teaspoon salt
  • black pepper to taste
  • olive oil

Directions:

Peel onion and potatoes. Grate them and pour off extra liquid. Add egg, flour, and sour cream, salt and black pepper, stirring until the batter is thick. You can also blend all ingredients in blender (for about 5 seconds) to make the batter faster.

Preheat a large pan or griddle to medium heat. Add a little bit of oil to the pan, and cook small potato pancakes until golden brown on all sides.

5. Green Pancakes

Spring is just around the corner, though the weather is still cold and frosty. You can make the morning brighter by cooking these warm, green pancakes. Not only will you wow your kids on Pancake Day, they will eat greens without noticing it. You can make either thick or thin pancakes.

Ingredients:

  • 1 1/2 cups flour
  • 2 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/4 cup milk
  • 4 cups spinach leaves
  • 1/2 cup Greek yogurt
  • 1 tablespoon melted coconut oil
  • 2 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Directions:

Place spinach leaves, coconut oil, eggs, honey, vanilla extract, yogurt and milk in your blender, and blend until smooth.

In a bowl, combine flour, salt and baking powder. Add to your green mixture, stirring until smooth. Cook your pancakes until light golden on both sides.
