I thought I would throw in a few goodies made from mixes in this month of “make your own’s.” What is the point of making a bunch of homemade mixes if all you do with them is make biscuits? B-o-r-i-n-g. You can use homemade mix to make pancakes, biscuits and waffles or you could branch out…and make cookies!!
I had thought I that I had tried all versions of chocolate chip cookies until I came across the idea of using Bisquick as a base for them. I certainly could not resist the temptation to try them out. If you ever need a quick cookie, this is definitely the way to go. The resulting cookie is soft and delicious, easily as good as any cookie made by a mix or store bought. I am not going to say that it was as good as some of the other cookies I have tried. Sometimes speed and convenience win over going to all of the trouble of making a truly homemade cookie. Then again, my tastes might not match your tastes and you may LLLLLOOOOOVVVVVEEEE this cookie. Either way, you need to know about this cookie at the very least.

2. Ingredients for Bisquick Chocolate Chip Cookies
- 2 cups Bisquick or similar biscuit mix
- 1 cup brown sugar
- 2 tsp vanilla
- 1 egg
- 1 cup milk chocolate chips
3. Directions:
- With a mixer, combine biscuit mix with brown sugar and butter.
- Add egg and vanilla.
- Stir in chips.
- Scoop onto baking sheets and bake 8-10 minutes at 350 degrees.
