2. Ingredients for Gluten-Free Double Chocolate Scones

  • 1½ cups gluten-free all-purpose blend
  • 1 tsp xanthan gum
  • 1 tsp gluten-free baking powder
  • 3 Tbsp butter
  • 2 tsp vanilla
  • 1 egg
  • 1 cup chocolate chips (mini chips would work really well)

3. Directions:

  1. In a mixing bowl, whisk together the first seven ingredients (dry).
  2. With a pastry blender, cut in the butter. (You can also put this in a food processor to mix)
  3. Add the milk, vanilla, and egg.
  4. Stir in the chocolate chips.
  5. Divide the dough out onto two balls.
  6. Pat each into mounded circles on a gluten-free floured work surface.
  7. Cut each circle into four wedges.
  8. Place on a rimmed baking sheet.
  9. Bake in a preheated 400 degree oven for 12-14 minutes.
