Blaaaaaah! I am having the hardest time writing anything worth reading today! I made this amazing hash with smoked sausage and French fries and I can think of nothing to say about it. I wish I could let you all taste the amazing flavor of the caramelized onion with the hint of apple balsamic teamed up with the smokey beef sausage. It was a major success considering it was a thrown together meal.
I like using French fries as straight up potatoes in casseroles as well as the usual side to burgers and chicken fingers. Ore-Ida is a gluten free friendly company so I buy them exclusively. In my pre-GF days, I opted for the cheaper store brands, but I have found that store brands rarely take the time or expense to certify themselves as gluten free. I buy the big five pound bags of fries and get two meals out of it; if I am lucky. Oh the joys of feeding teenage boys!

2. Ingredients for French Fry and Smoked Sausage Hash
- 1 medium onion, diced
- 1 Tbsp olive oil
- 1 tsp seasoning salt
- 16 oz smoked beef sausage, sliced to ¼ inch thick
- 1 Tbsp apple balsamic vinegar (can use plain)
- 32 oz crinkle cut French fries, thawed and cut into 1″ lengths
3. Directions:
- Heat oil in a large nonstick skillet on medium.
- Add onion and seasoning salt.
- Cook and stir until onion begins to caramelize.
- Add the sausage and vinegar.
- Cook until the vinegar is absorbed and the meat begins to brown a little.
- Add the fries.
- Stir and cook until the fries are heated through and get a little color.
