Recipe For Peanut Butter and Jelly Smoothie

  

No matter how old I get, I show no signs of outgrowing my love and adoration for peanut butter and jelly sandwiches. These days they are served up on toasted gluten free bread with unsweetened peanut butter and all-fruit jam. As I was making up smoothies this week, I got to thinking that a Peanut Butter and Jelly Smoothie would taste pretty good. I was SO right!

I haven’t been particularly impressed with this year’s strawberries so far. I have tried them from all of the major grocery stores and have tried all of the brands. All of them were a little sour/bitter with none of that gorgeous sweetness I want in a ripe strawberry. It wasn’t until last week when I found Driscoll’s strawberries at Target that I found my nirvana. This is an unpaid, unsolicited total endorsement for Driscoll’s berries. In my opinion, they are always top notch quality and the best flavor. It’s worth seeking them out. Luckily, most grocers carry them at some point in the year.

For this smoothie, I used fresh strawberries as well as one Tablespoon of all -fruit jam. Because the berries were perfect, it needed no other sweetener. I love that smoothies don’t have to be milkshake clones with tons of sugar. I feel no guilt drinking them any time of day.

2. Ingredients for Peanut Butter and Jelly Smoothie

  • ⅔ cups plain Greek yogurt
  • 1 Tbsp strawberry All-Fruit jam (such as Smuckers or Polaner)
  • 2 Tbsp unsweetened creamy peanut butter
  • 1 Tbsp ground chia seeds
  • 6-8 fresh strawberries,cleaned and hulled
  • 4 ice cubes

3. Directions:

  1. Place all of the ingredients in a blender.
  2. Blend until smooth.
  3. Pour into a glass and drink!
