  • Nonstick cooking spray
  • 1 1/2 lb. Yukon gold potatoes
  • 2 scallions
  • 1 1/2 Tbsp. extra-virgin olive oil
  • 1 tsp. garlic powder (for potatoes)
  • 1/2 tsp. salt (for potatoes)
  • 1/4 tsp. black pepper (for potatoes)
  • 1 1/2 lb. cooked chicken (3 heaping cups, diced or shredded)
  • 1/2 tsp. salt (for chicken)
  • Black pepper (to taste, for chicken)
  • 2 tsp. garlic powder (for chicken)
  • 1 tsp. paprika
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese (4 oz.)

3.1 Preheat

Preheat the oven to 400°F.

3.2 Prep

Spray a 9×13-inch baking dish with nonstick cooking spray.

Dice the potatoes into 3/4-inch pieces and place in the baking dish. Finely mince the scallion and set aside.
