  • salmon fillets
  • kosher salt
  • panko breadcrumbs
  • freshly grated lemon zest
  • black pepper
  • flour
  • large eggs
  • vegetable oil
  • mayonnaise
  • pickle relish
  • chopped fresh chives
  • Dijon mustard
  • lemon juice
  • lemon wedges

3. Directions:

  1. Cut salmon fillets crosswise into strips about 1 inch wide. Season all over with 1 1/2 teaspoons kosher salt.
  2. Combine breadcrumbs, lemon zest, and ½ teaspoon pepper in a shallow bowl. Put flour in another shallow bowl, and eggs in a third.
  3. Dredge the salmon pieces in flour, shaking off excess. Then dip each in egg, allowing the excess to drip off, and coat with breadcrumb mixture. Set salmon aside on a plate.
  4. Fill a large cast-iron skillet or Dutch oven with about ½ inch oil and heat over medium-high heat until rippling (350°F). Meanwhile, preheat oven to 200°F.
