This recipe originally posted on December 14, 2008. It needed more love, so here it is again. It is one of our favorite winter/fall desserts. I think I could eat an apple dessert every day of winter. Are there that many? This is a pudding in the thick cake sense…like a figgy pudding or a steamed pudding or an Indian pudding. It is not a custard, so it isn’t creamy and smooth in the Jell-o sense. The vanilla butter sauce is a delightful finishing touch. Keep it in a jar and use the rest over other cakes or pies or desserts. You may find yourself eating it by the spoonful. 2. Ingredients for Apple Pudding
- 1 cup sugar
- 2 eggs
- 2 cups flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 4 cups coarsely chopped, peeled apples
- 1 cup butter
- 1 cup sugar
- 1 cup evaporated milk
- 1 tsp vanilla
3. Directions:
- Cream sugar and butter.
- Add eggs and vanilla.
- Combine dry ingredients and add.
- Mix in apples.
- Spread into a greased 9 X 13 pan and bake 45 minutes at 350 or until the middle is set.
- To make the sauce: Boil the butter, evaporated milk and sugar until sugar is dissolved.
- Remove from heat and add vanilla .
- Serve the baked pudding with the sauce.
