One day, I had three leftover hoagie rolls that were getting stale, so I threw them into a French toast casserole. It is a wonderful way to use up bread that is on the verge of being thrown out. Another day, I made rolls that didn’t turn out the way they should have…so they went into a French toast casserole! No one could tell that the rolls, by themselves, might have been too dense for human consumption.
Think of this as a super simple bread pudding, only it’s not creamy or sweet enough by itself. It lets you pour on butter and maple syrup without being too sweet or soggy. Make it up early and keep it in the fridge until baking up to 12 hours. The leftovers go back in the fridge and can be cut into squares for a meal the next day.
