How is that title for a delicious mouthful? I couldn’t shorten it because all of the flavors of honey and lemon and lime, plus the big bites of raspberry swimming in Greek yogurt all needed mentioning. These are some great snacks: healthy, full of protein and real fruit. I even got my harshest critic, The Thinker to enjoy them!
It’s Improv Challenge time and this month’s theme is lemon and lime. It is ironic that there is a huge lime shortage while we are trying to bake, cook or create with that specific ingredient. I apologize to any participants who had to pay exorbitant prices to join us this month. I opted for bottled key lime juice and a surprise ingredient: true lemon powder.
While on my smoothie kick, I decided I might just as well branch out into yogurt pops. Next I will be making my own yogurt again. It’s much cheaper and I want to play with the whey that will be a bi-product of homemade Greek yogurt.
These frozen pops are delicious. I used plain yogurt and honey, but you could use vanilla or honey flavored yogurt that is already sweetened and get the same results. I used already frozen raspberries because I was in a hurry to get the entire thing frozen. You can use fresh, room temperature berries as well.
