Recipe For One of the Many Variations of Chicken Bundles

  

What did we do before Pillsbury came up with crescent rolls? Well, actually, we followed recipes like Julia Child’s puff pastry recipe and everything was homemade. Regular readers of my blog know that I prefer homemade over store bought 9 times out of 10. Crescent rolls are for that tenth time. The nights when I have to pick kids up from football practice only to get them to boy scouts an hour later. The days that I have to spend in Phoenix, hours away from where I live, with a child at a specialist’s office. These are the crazy, no time for anything, pull my hair out days the require store bought cheats. Thank you, Pillsbury, for providing us with such cheats.

So, here is my version of one of those recipes that makes it into every single community, church or school cookbook ever published. I have also made it with tuna. In fact one night, I didn’t tell anyone that they were going to be eating tuna instead of chicken. One of my sons stopped eating after the first bite and said, “Wait, what’s in here?” When I said tuna, he replied, ” And nothing else? You didn’t put anything weird in here, right?” Oh how those boys trust their mom!

2. Ingredients for One of the Many Variations of Chicken Bundles

  • 3 cups cooked chicken, chopped (can use canned or rotisserie)
  • 1 8 ounce brick of cream cheese
  • 1 small jar pimentos
  • 2 packages Pillsbury crescent rolls or sheets

3. Directions:

  1. Combine the chicken, cream cheese, pimentos, green onions, garlic powder and thyme in a bowl.
  2. Unroll the crescent rolls and pinch them together to form two rectangles (or if you are using the sheets, just unroll them).
  3. Cut the big rectangles into four little ones (that’s a total of 8).
  4. Spread ⅓ cup of mixture on four of the rectangles.
  5. Cover with the other four.
  6. Pinch the edges together with a fork.
  7. Bake 400 degrees for 15 minutes.

4. Tips and advices:

  • You can also substitute two cans of tuna for the chicken if you like. It is quite delicious.
  • If you end up with a lot of leftover filling, open a box of Stove Top chicken stuffing, mix it up and spread it on top of the filling in a microwave safe casserole, heat and serve. It’s just as quick and really tasty.
