Recipe For Pumpkin Cookie Pizza

  

It has started. The annual six month candy glut is here and will last all the way until April when the last of the chocolate bunnies hops off the shelves. We will be saturated with candy corn, candy canes, chocolate hearts and jelly beans and then, just as suddenly it will stop as summer approaches and we realize we have to fit back into our swim suits.

That is half a year away, though, and the plethora of sweets has barely begun, so grab your stretchy pants and big sweaters. Let the Amazing American Candy Feast begin!!!

To help out, because I am nothing if not a facilitator, I made you this candy pizza. The “crust” is a pumpkin cookie. The “sauce” is cream cheese frosting and the “cheese” is caramel ice cream sauce. Like any pizza, you get to pick your toppings. I chose gummi bears and various chocolate bars including 3 musketeers, solid chocolate, heath and crunch bars. I was afraid peanut butter cups might have been too over the top. {wink}

2. Ingredients for Pumpkin Cookie Pizza

  • 1 package pumpkin spice cookie mix (and items called for in directions)
  • 1 jar cream cheese frosting
  • or
  • 1 8 oz package cream cheese
  • 3 cups powdered sugar
  • 1 jar butterscotch or caramel ice cream sauce
  • various chocolate candy bars (at least 6 regular sized or 15 mini), roughly chopped
  • 1 4 oz bag gummi bears or 4 small bags fruit snacks, chopped

3. Directions:

  1. Make pumpkin cookie dough according to package directions.
  2. Place dough on a large cookie sheet or pizza pan, spreading out into a circle or oblong ¾ inch thick.
  3. Bake 300 degrees for 20 minutes.
  4. Check doneness.
  5. Continue baking until the top is no longer shiny and center is not gooey.
  6. You will not be picking this cookie up, so it doesn’t need to be crunchy.
  7. Remove from oven and allow to cool on the pan.
  8. If making homemade cream cheese frosting, beat the cream cheese with the vanilla.
  9. Add the powdered sugar until smooth.
  10. Spread frosting onto cooled cookie, leaving a small edge uncovered like pizza.
  11. Sprinkle randomly with chopped candy.
  12. Drizzle with caramel sauce.
  13. Serve in wedges like a pizza.
