Recipe For Sweet and Purple Potato Rounds with Spicy Black Pepper Ketchup


I’m loving all the beautiful squash and potatoes that are in season right now!! Here is a fast, easy recipe that is WAY better than french fries!

I’ve made sweet potato fries many times and decided to switch things up with these baked sweet and purple potato disks. They taste amazing and are so good for you!

Superior fiber content. Sweet potatoes contain almost twice as much fiber as other types of potatoes. Contributing close to 7 grams of fiber per serving, they make an excellent starchy addition to any meal. The high fiber content gives them a “slow burning” quality. This basically means their caloric energy is used more slowly and efficiently than a low-fiber carbohydrate.

Heart-healthy. They contain a large amount of vitamin B6. This vitamin is crucial in breaking down a substance called homocysteine, which contributes to hardening of the arteries and blood vessels. Beta-carotene also helps to internally protect your skin from sun damage by both deflecting and repairing cell damage caused by excessive UV exposure. It also is an excellent nutrient for eye health and has been linked to prevention of vision loss and macular degeneration.

A great source of manganese. Manganese is a little-discussed trace mineral that has some great health benefits. It is a pivotal component in the metabolism of carbohydrates which helps support healthy blood sugar levels. This can help stabilize the appetite for hours as opposed to the temporary satisfaction that comes with most other carbohydrates.

  • Cook Time: 10 mins
  • Total Time: 55 mins

  • Calories: 297kcal

2. Ingredients for Sweet and Purple Potato Rounds with Spicy Black Pepper Ketchup

  • 2 large sweet potatoes, peeled and cut into disks
  • 6 medium purple potatoes, cut into disks (I did not peel these)
  • olive oil
  • sea salt
  • hot sauce – my favorites are Crystal and Frank’s
  • 1 Tbs fresh cracked black pepper

3. Directions:

  1. In a large Ziploc bag, toss sweet potatoes with just enough oil to coat. Empty your bag onto a baking tray lined with aluminum foil and sprinkle with coarse sea salt. Repeat with purple potatoes. I do the sweet potatoes and purple potatoes separately so the colors do not run.
  2. Bake at 400F for 20mins or until the edges are slightly browned and then use a spatula to flip and bake for another 10-15mins or until edges are slightly browned.
  3. For the Spicy Ketchup: In a small bowl mix ½ cup organic ketchup with a few dashes of hot sauce and about a Tbs of fresh cracked pepper.
