I love to think outside the box when I make breakfast. Case in point would be my French Fry Breakfast Casserole. This is another example. Taquito Brunch Skillet. It’s not just for breakfast, of course. I have served it as a quick dinner, too.
You can mix up the recipe, adding more vegetables, like tomatoes, olives, mushrooms, corn or zucchini. You can use chicken or beef taquitos, with cheese or not. You can change out the cheese for any you like, as well. If you use fresh potatoes, increase the initial cooking time.

2. Ingredients for Taquito Brunch Skillet
- 2 Tbsp olive oil
- 1 onion, chopped
- 2 15 oz cans diced potatoes, drained
- 1 pkg 25 chicken taquitos thawed and sliced into 1 inch pieces
- 2 cup shredded cheese (Cheddar, Monterrey Jack, Fontina, etc)
- 6 eggs, beaten
3. Directions:
- Heat oil, cook potatoes and onions until soft.
- Add taquitos, salsa and olives.
- Cook until heated through.
- Mix cheese and eggs.
- Pour mixture into skillet.
- Cook until the eggs are done.
