Recipe For Ranch Chicken Salad


I made the best salad this week. There was some leftover cooked chicken in the freezer and I had some fresh tomatoes. Both were begging to be eaten together, so this is what I came up with. Serve on rolls as sandwiches or on a bed or lettuce or by itself straight out of the bowl.

(Note: I have made this salad many times since first posting this. It’ s a little different each time because I add whatever is in the fridge at the time. The cheese is optional…if you are watching calories especially, but it’s good!!)

2. Ingredients for Ranch Chicken Salad

  • Ranch Chicken Salad
  • 3 cups chopped cooked chicken
  • 1 envelope ranch salad dressing mix
  • ⅓ cup mayonnaise
  • ⅓ cup milk
  • 1 large tomato, diced
  • 2 avocados, diced or sliced
  • 1 small can chopped water chestnuts
  • 2 stalks celery, thinly sliced
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste

3. Directions:

  1. Mix the ranch with mayo and sour cream.
  2. Stir in the remaining ingredients until well covered with dressing.
  3. You can choose to slice the avocado and serve it under the chicken or put it in the salad chopped.
