2. Ingredients for Creamy Tomato Alphabet Pasta

  • 1 lb. whole wheat pasta (alphabet pasta or other smaller pasta)
  • 3 cups LACTAID® 1% Lowfat Milk (for cooking pasta)
  • 1 cup water
  • 1/2 cup chopped onion (from 1/2 medium yellow or white onion)
  • 1 clove garlic
  • 1/3 cup olive oil (regular or extra-virgin)
  • 14 oz. canned whole peeled tomatoes (plus their juices, no salt added)
  • 1/4 cup LACTAID® 1% Lowfat Milk (or LACTAID® Fat Free Milk)
  • 1 tsp. dried mixed herbs (such as basil and oregano)
  • 1/4 tsp. iodized coarse sea salt (more to taste)
  • 1/2 tsp. freshly ground black pepper (more to taste)

  2. Place pasta, milk, and the water in a large skillet and stir together well. Add more water if the pasta is not completely covered. Bring to a boil over high heat, then reduce heat to medium-high. Cook, stirring occasionally, until the pasta is just tender and the liquid has reduced and thickened to coat the pasta. Remove from heat.
  3. Cut one end off an onion to create a flat base so it doesn’t roll off the cutting board. Halve the onion, peel off the skin, and dice one half.
