2. Ingredients for Crispy Panko-Parmesan Chicken Breasts
- 1lb (450g) thinly sliced chicken breasts (4)
- 1 cup panko breadcrumbs
- 1/4 cup shredded parmesan
- 1 tsp dried parsley
- 1/4 tsp salt
- 2 tbsp dijon mustard
- 2 tsp mayonnaise
Preheat the oven to 425°F.
Line a large baking sheet with parchment paper.
Combine the Parmesan, dried parsley, panko, and salt in a shallow dish.
In a separate shallow dish, mix together the mayonnaise and mustard.
Dredge each chicken breast in the mustard mixture, then coat with the panko mixture. Transfer the chicken breast to the prepared baking sheet. Repeat with the remaining chicken breasts.
Bake chicken on middle rack of oven for 7 minutes.
