- Nonstick cooking spray
- 1 cup milk (whole or 2%)
- 1/4 cup extra-virgin olive oil
- 1 large egg
- 260g tapioca flour (2 cup plus 2 Tbsp.)
- 1/2 tsp. salt
- 2 oz. grated Parmesan cheese (1/2 cup)
- 2 oz. shredded mozzarella (or cheddar cheese, 1/2 cup)

3.1 Preheat
Preheat the oven to 400°F. Spray a 24-cavity mini muffin pan very liberally with nonstick cooking spray. Set aside.
3.2 Prep
Place the milk, olive oil, egg, tapioca flour, and salt in a blender. Process on high until smooth. Add the cheeses and pulse until incorporated, 4 to 5 times.
Pour the mixture into cavities of muffin pan, filling each slightly more than half full.
3.3 Oven
Bake the pão de queijo on middle rack of oven until puffed and golden brown, about 20 minutes.
