- 1 lb. beets
- 1 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup crumbled goat cheese
- 1 Tbsp. fresh dill (chopped, optional)

3.1 Preheat
Preheat the oven to 400°F.
3.2 Prep
Line a large baking sheet with parchment paper. Set aside.
