The bars continue. These particular bars are so versatile. By switching the flavor of the jam in the middle, the bars change completely. Jellies, marmalades, jams and preserves all have different consistencies, so that will make a difference, too. You can add coconut or chopped nuts to the crust. You can sprinkle chocolate or butterscotch chips on top. Do you see what I mean? The possibilities are as limited as your imagination.

I even mixed it up one year and tried cranberry jelly as a filling. The family gave that combination mixed reviews when they tried them plain.. With a dollop of vanilla ice cream, however, they made quick work of eating them all gone.

2. Ingredients for Jam Bars

  • ⅔ cup jam (or more, if needed)
  • 1¼ cup flour
  • 2 tsp vanilla
  • 1½ cups oats
  • (optional: ½ cup coconut or chopped nuts )

3. Directions:

  1. In a bowl, mix the flour, sugar, soda, vanilla, oats, butter, salt and optional ingredients.
  2. Set aside 1 cup of the crumb mixture and press the remainder in a 9X13 pan (or a smaller dish for thicker bars).
  3. Spread the jam over the crust to ½ inch of edge.
  4. Sprinkle the reserved cup of mixture over the jam.
  5. Bake at 350 for 20-25 minutes or until crust is lightly browned.
  6. Let cool before you slice.
