  • nonstick cooking spray
  • 2 large very ripe bananas (250g, well mashed)
  • 1/3 cup canola oil
  • 1/2 cup granulated sugar (100g per 1/2 cup)
  • 1/4 cup light brown sugar (50g per 1/4 cup, packed)
  • 2 large eggs
  • 1/2 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips

3.1 Preheat

Preheat the oven to 350°F.

3.2 Prep

Spray a 9×5-inch loaf pan with nonstick cooking spray. Set aside.

Place the mashed bananas, canola oil, granulated sugar, brown sugar, eggs, and vanilla extract in a large mixing bowl. Whisk vigorously until smooth and combined.
