2. Ingredients for Beef and Snap Pea Stir-Fry

  • 1 1/2 lb. beef flank steak
  • 3 Tbsp. dry sherry
  • 5 tsp. soy sauce
  • 1 Tbsp. cornstarch
  • 1/4 Tbsp. oyster sauce
  • 4 tsp. soy sauce
  • 4 tsp. toasted sesame oil
  • 1/2 tsp. freshly ground black pepper
  • 1 small onion
  • 1 jalapeno chili (for a less spicy dish, cut out the seeds or omit the chili)
  • 3/4 lb. sugar snap peas
  • 3 Tbsp. canola oil (divided, for beef)
  • 2 Tbsp. canola oil (for vegetables)
  • 1 tsp. toasted sesame seeds

3. Directions:

3.1 Prep

Thinly slice the beef across the grain. Combine beef with the sherry, soy sauce, and cornstarch in a medium mixing bowl.

Combine the oyster sauce, soy sauce, sesame oil, and pepper in a small bowl and mix well. Set aside.

Peel and thinly slice the onion. Stem and thinly slice the jalapeño. Remove stems and strings from the peas. (To remove strings, snap each pea at the stem and pull sharply along the straight side.) Set vegetables aside.

3.2 Stove

Heat 1 tablespoon of oil in a wok or large heavy-bottomed saute pan over medium-high heat. Swirl oil to coat the bottom. Arrange one-third of beef, flat side down, in wok and cook until browned on one side, about 1 minute per batch. Transfer beef to a medium heatproof bowl. Repeat process twice more with remaining oil and beef.

Reduce heat to medium and add oil to wok. Add onion and stir-fry until it begins to soften, about 1 minute. Add jalapeño and snap peas and cook until snap peas turn bright green, about 2 minutes.

3.3 Serve

Return beef and accumulated juices to wok and pour in the sauce. Stir until beef is heated through, 1-2 minutes. Sprinkle sesame seeds over top. Serve immediately.
