  • Nonstick cooking spray
  • 1 1/4 cup zucchini (finely shredded)
  • 1/2 cup canola oil
  • 1/2 cup light brown sugar (packed)
  • 1/2 cup granulated sugar
  • 1/4 cup sour cream
  • 2 eggs
  • 1/2 tsp. vanilla extract
  • 2 cup all-purpose flour
  • 1 1/2 tsp. cinnamon
  • 1/8 tsp. nutmeg (optional)
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/4 cup raisins (optional)
  • 1/4 cup walnuts (finely chopped, optional)

3.1 Preheat

Preheat the oven to 350°F.

3.2 Prep

Spray a 9×5-inch loaf pan with nonstick cooking spray. Set aside.

Press the shredded zucchini between two layers of paper towels to remove any excess moisture. Place the zucchini, canola oil, brown sugar, granulated sugar, sour cream, eggs, and vanilla in a large mixing bowl. Whisk vigorously until smooth and combined.

Add the flour, cinnamon, nutmeg (if using), baking powder, baking soda, and salt to the bowl. Continue whisking until the mixture is just combined. Do not overmix. Fold in the raisins and walnuts (if using).
