  • Nonstick cooking spray
  • 1 cup zucchini (finely shredded)
  • 6 Tbsp. canola oil
  • 3/4 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1/3 cup nondairy milk
  • 1 Tbsp. flaxseed meal (ground flaxseed)
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp. vanilla extract
  • 2 cup all-purpose flour
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. salt

3.1 Preheat

Preheat the oven to 350°F.

3.2 Prep

Spray a 9×5-inch loaf pan with nonstick cooking spray. Set aside.

Press the shredded zucchini between two layers of paper towels to remove the moisture. Add the zucchini, canola oil, brown sugar, granulated sugar, nondairy milk, flaxseed meal, applesauce, and vanilla to a large mixing bowl and whisk vigorously until smooth and combined.

Add the flour, cinnamon, nutmeg, baking powder, baking soda, and salt to the bowl. Continue whisking until the mixture is just combined. Do not overmix.
