2. Ingredients for Honey Dressed Avocado Tomato Salad

  • 1 avocado (diced)
  • 1/2 English cucumber (diced)
  • 1 pint multicolored grape tomatoes (or cherry tomatoes, quartered)
  • 1/4 cup basil (thinly sliced)
  • 3 scallions (thinly sliced)
  • 1 medium garlic clove (minced)
  • 1 1/2 tsp lemon juice
  • 1/2 lemon (zested)
  • 1/2 tsp Dijon
  • 3/4 tsp sea salt
  • 2 tsp honey (plus additional for garnish)
  • 1 tbsp olive oil
  • Freshly ground pepper (to taste)
