  • Nonstick cooking spray
  • 1 cup milk (whole or 2%)
  • 1/4 cup extra-virgin olive oil
  • 1 large egg
  • 260g tapioca flour (2 cup plus 2 Tbsp.)
  • 1/2 tsp. salt
  • 2 oz. grated Parmesan cheese (1/2 cup)
  • 2 oz. shredded mozzarella (or cheddar cheese, 1/2 cup)

3.1 Preheat

Preheat the oven to 400°F. Spray a 24-cavity mini muffin pan very liberally with nonstick cooking spray. Set aside.
