2. Ingredients for Salted Caramel Chocolate Chip Cookies
- 3/4 cup unsalted butter (softened)
- 3/4 cup light brown sugar (packed)
- 1/3 cup granulated sugar
- 1 large egg
- 2 tsp. vanilla extract
- 2 cup all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cornstarch
- 1/2 tsp. salt
- 1 cup semisweet chocolate chips
- 20 bite-size chocolate-covered caramels (about 3/4-inch diameter, such as Rolo, unwrapped)
- Flaky sea salt
Line two baking sheets with silicone baking mats or parchment paper. Set aside.
Place the butter, brown sugar, and granulated sugar in a large bowl. Beat with a hand mixer on medium speed until well combined, about 1 minute. Add the egg and vanilla and continue to beat until smooth, about 30 seconds.
Sift the flour, baking soda, cornstarch, and salt into the butter mixture. Beat on low speed, scraping the sides of the bowl with a rubber spatula as needed, until a smooth dough forms. Fold in the chocolate chips.
Divide the dough into 20 balls, using about 2 tablespoons for each, and arrange on the prepared baking sheets. In the palm of your hand, gently press a ball into a 1/2-inch disk. Place a chocolate-covered caramel in the center of the disk, and enclose it with the dough. Return the cookie to the baking sheet. Repeat with the remaining cookie dough and caramels. Press a few flakes of sea salt onto the top of each cookie. Transfer the baking sheets to the freezer while the oven preheats. Alternately, freeze the cookies on a small baking sheet or large plate and transfer to the large baking sheets for baking.
Preheat the oven to 350°F.
Bake the cookies on middle rack of oven until puffy and golden brown at the edges, 15-17 minutes.
Check to see that cookies are done. Remove from oven or add time as needed.
Allow cookies to rest and firm up on the sheets for 5-10 minutes, then transfer to a wire rack to cool completely before serving.
