2. Ingredients for Thai Chicken in Garlic and Pepper
- 4 chicken breasts cut into thin strips
- 5-6 garlic cloves
- 2 tablespoons crushed black pepper (it’s best to use fresh grains and crush with a mortar)
- 3 tablespoons palm sugar (otherwise use brown sugar)
- 3 tablespoons nuoc mam fish sauce
- 3 tablespoons dark soy sauce
- 2 tablespoons oyster sauce

- In a wok (or a skillet), heat a dash of oil then brown the chicken in it. Cook on high heat, stirring regularly for about ten minutes (cooking time depends on size of chicken pieces).
