- 3 medium very ripe bananas (about 345g per 3 bananas, well mashed)
- 1/3 cup canola oil
- 1/2 cup light brown sugar (100g per 1/2 cup, packed)
- 1/4 cup granulated sugar (50g per 1/4 cup)
- 1/3 cup nondairy milk
- 2 tsp. flaxseed meal
- 1/2 tsp. vanilla extract
- 1 3/4 cups all-purpose flour
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt

3.1 Preheat
Preheat the oven to 350°F.
3.2 Prep
Spray a 9×5-inch loaf pan with nonstick cooking spray. Set aside.
Place the mashed bananas, canola oil, brown sugar, granulated sugar, nondairy milk, flaxseed meal, and vanilla extract in a large mixing bowl. Whisk vigorously until smooth and combined.
Add the flour, cinnamon, baking powder, baking soda, and salt to the bowl. Continue whisking until the mixture is just combined. Do not over-mix.
Pour the batter into the prepared loaf pan.
