2. Ingredients for Vegan Green Bean Casserole

  • Nonstick cooking spray
  • Salt (for blanching)
  • 1 lb. green beans (trimmed)
  • 8 oz. cremini mushrooms
  • garlic cloves
  • 1/2 yellow onion (medium)
  • 1 tsp. dried thyme
  • 2 Tbsp. olive oil
  • 3 Tbsp. all-purpose flour
  • 1/2 cup vegetable broth
  • 1 1/2 cup unsweetened almond milk (or cashew milk, or creamer)
  • 1/2 tsp. salt (for green beans)
  • 1/4 tsp. black pepper
  • 3/4 cup french fried onions

3. Directions:

3.1 Preheat

Preheat the oven to 400°F.

3.2 Prep

Spray an 8- or 9-inch square casserole dish with nonstick cooking spray. Set aside.

Cut the green beans into 1 1/2-inch pieces. Slice the mushrooms, finely chop the onion, and mince the garlic.

Bring a large pot of salted water to a boil.

Once the water is boiling, add the green beans. Blanch for 3 minutes, until beans are bright green. Drain the green beans into a colander and rinse with cold water.
