- Nonstick cooking spray
- 16 oz. cream cheese (softened)
- 8 oz. Hatch green chiles
- 1 tsp. garlic powder
- 1 tsp. cumin
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 4 cans sweet corn kernels (14 oz. per can, drained)
- 1 cup shredded Mexican-blend cheese
Preheat the oven to 350°F.
Spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.
Place the cream cheese, chilies, garlic powder, cumin, salt, and black pepper in a large mixing bowl. Beat with a hand mixer on medium-high speed until the cream cheese is completely smooth, 2-3 minutes. Fold in the corn kernels.
Transfer the mixture to the prepared baking dish and smooth it into an even layer. Sprinkle the shredded cheese evenly over the top.
Bake the casserole on middle rack of oven until the cheese is golden brown and dish is bubbling at the edges, 40-45 minutes.
