  • 1 scallion
  • 8 links fully cooked turkey sausage (or chicken sausage)
  • 2 cups mixed vegetables (like broccoli, peppers, asparagus, spinach)
  • 1/2 cup 0% plain greek yogurt
  • 16 egg whites
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 6oz. (1 1/2 cups) lite shredded mozzarella cheese

3.1 Preheat

Preheat the oven to 350°F.

3.2 Prep

Spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.

Mince the scallion and set aside.

Finely chop the sausage and set aside.

Dice the vegetables into 1/4 inch pieces.

3.3 Stove

Place the vegetables in a large skillet. Set the skillet over medium-high heat, and pour in the water. Bring the water to a low boil and cook, stirring occasionally, until the vegetables are tender and the water is completely evaporated. Set aside.
