  • unsalted butter
  • almond flour
  • ground cinnamon
  • ground ginger
  • salt
  • baking powder
  • medjool date
  • orange zest
  • honey
  • large eggs
  • unsalted butter

3. Directions:

  1. Preheat oven to 350°F. Brush or rub inside of a 10-12-cup Bundt pan with softened butter.
  2. Put almond flour, cinnamon, ginger, salt, and baking powder in a large bowl and whisk together.
  3. Pit dates. Put dates, orange zest, honey, and eggs in a blender and process until smooth. Scrape insides of container. Open top of blender lid and with motor running, gradually add melted butter. Process until well blended, thick, and pale, 1-2 minutes.
  4. Pour date mixture into bowl with dry ingredients and stir until evenly blended. Scrape batter into prepared pan and smooth top.
  5. Bake cake on middle rack of preheated oven until a toothpick inserted into center of cake comes out with a few moist crumbs clinging to it, 50-60 minutes.
  6. Set cake in pan on a cooling rack for 15 minutes. Invert cake over rack to release. Let cake cake completely on rack, about 1 hour.
  7. Transfer cake to a cake plate and cut into pieces.
