1. Grilled Shrimp

- 2 lbs. shrimp, peeled and deveined
- ¼ c. olive oil
- ¼ c. lemon juice
- ¼ c. parsley, minced
- 2 garlic cloves, minced
Mix the oil, lemon juice, parsley and garlic in a bowl. Add the shrimp and mix well. Refrigerate for half an hour. Preheat the grill to high. Drain the shrimp and skewer them. Brush oil on the grill and cook the shrimp for two minutes on each side.
