Record-breaking summer temperatures provide the perfect excuse to stay out of the kitchen. Soups, especially cold ones, make for a satisfying summer meal that will replace fluids lost through your sweat.
The following meat-free soups are a mix of cold soups, fruit-based soups, and raw soups that will keep you cool all summer long.
1. Sweet Corn and Tomato Soup
Blend tomatoes, sweet corn, garlic, fresh dill, hot water, hemp seeds, walnuts, salt and pepper in your blender. Add half of a small avocado or some olive oil to add some creaminess to the soup.
Blend the ingredients until smooth, pour into a bowl, and top with cubes of avocado and honey.
